Starter
White Bazpacho or Gazpacho Blanco
1 slice white broken and crusts removed
2 cloves garlic chopped
50g blanched almonds
1 tblsp olive oil
1 tblsp white wine vinegar
600ml water
Blend all ingredients in processor until smooth. Adjust consistency with water, to that of a rich milk. Adjust seasoning with vinegar, sugar or salt and chill.
Serve in tumblers with white seedless grapes on the side delicious.
Main Course
Truchas con setas en vino de Rioja
Trout with bacon red wine and mushrooms
4 fat trout gutted and cleaned
8 slices of smoked streaky bacon or serrano ham
Few sprigs of thyme, salt and pepper
110g of your favourite mushrooms
1/2 pint of red wine
Salt pepper and thyme the inside of the trout and then wrap it in bacon.
Fry gently for about 5 minutes each side then remove and reserve. Fry mushrooms well in a little butter and oil. Add wine and reduce until you have a good sauce, pour on trout and serve.
Dessert
Melectones en Vino or Peaches in red wine
4 large peaches
110g caster sugar.
1 Cinnamon stick
1 bottle red wine
Scald peaches in boiling water and remove skin and stones. Add sugar and cinnamon to water, bring to boil and stir to make a syrup. Simmer peaches for 20 mins until they are tender. Serve with syrup and creme fraiche ...bliss!
